I make my own music-themed hot sauces (Feel Something Hot Sauce) and decided to make a limited edition run of all King Gizzard ones this year for their Denver shows. Thanks so much! The Exploding Suns is the hottest of this batch. I’ve made quite a few other, non-KG, ones that crank the heat levels but I wanted to really focus on accessibility and flavor for these ones.

tell me about fermented hot sauces, I’m guessing the fermentation adds more flavor/depth? what is being fermented?
Do you grow your own peppers? I’ve been growing a bunch of varieties for a few years now and it’s a really fulfilling hobby
So there are two ways to make hot sauce: the quick way, where you just blend up peppers and whatever else and add vinegar; and the fermented way, which is what brands like Tabasco does (although much, much longer than I do as they barrel age it). And yeah, it helps to add complexity and depth of flavor. The most basic way to do is to make a mash of peppers and salt, let it ferment in a container, and then add vinegar at the end. But the possibilities after that are pretty vast. You can add fruit, allium, spices, sweeteners, different types of vinegar - whatever you want. It’s a fun way to experiment with things in the kitchen. And making the labels and the brand has been a way to get creative and take ownership of something that I feel proud of. It’s been a really fun hobby this past year+!
I do! I used a lot in my sauces last year, but I started all of mine from seed this year and got a really late start, so most of them haven’t fruited yet so these sauces are all from commercial peppers. But right now I have some Carolina reapers, orange jalapenos, scotch bonnets, and this other one called an umorok growing and I’m very much looking forward to when I can finally harvest them.

I made my own hot sauce once it was super easy but I’d like to sample some one who knows what they’re doing. This is awesome!
I made hot sauce once years ago after a friend gave me a bunch of peppers. I cooked the peppers down in a cast iron pan we didn’t use often, which practically choked us out of our house.
A couple of weeks later, I made my daughter some pancakes for breakfast that she complained were “too spicy.” I thought she was making things up until I tasted one and realized I’d used the same pan as I had for the hot sauce!

Whats great about making your own is you can very the thickness. Tobasco is good but thin. If you makd it yourself, theres nothing stoping you from making it super thinck or even chunky.
